Your exhaust valve is operating exactly how it is designed to, so don't worry about that. Like what
@Clemet has suggested, I suspect fuel quality may be the culprit. Few times a year mine would go quiet a few km after a refill and until I filled up again. That said, sometimes it would just shut up randomly.
In my experience there are a few factors that will impact it's ability to bark (intake temps, air-con on or off, fuel quality, etc.) but even then I also found it to be somewhat unpredictable. I swear it had "moods". Want to exert your dominance and fire a couple of warning shots across the bow of a GTI and it will stay hushed. Want to keep it quiet because you've just downshifted passing cops or entering you own neighbourhood late at night and it will try and imitate a belt-fed machine gun. Mine had that sort of personality.
