Below will be a list of small things I would change, if anyone has any information on if I can, or how I can change any of these. Please let me know. :)

My car is the Australian variant if that makes any difference.

Automatically open all windows with remote (currently can only close)
Remote start (I was told this might be available once the I30N automatic trans comes out?)
Adjust headlight height (currently feels too low)
How to turn on automatic high beam (I have been accidently blinding people for the last two nights since it doesn't seem to be on)
How to turn on automatic windscreen wipers (I set them to auto and sprayed the front window and they havnt turned on.)(no rain lately)

I was wondering on the indicator/headlight arm there is a little 'on''off' it seems for an orange light that seems to look like maybe a fog light?
Does this do anything as I cant seem to figure out what it does other than turn a little orange light in my dash on.

Last of all the launch control, Ive been reading up and ive only got it to work 4-5 times out of 50+ tries.
My process is:
Car is warmed up,
No error lights in the dash,
Select N, (and have tried N custom)
ESC Sport is turned on,
Handbrake off,
Make sure car is not rolling,
Clutch in all the way,
Change from N to 1st gear,
Ensure steerwheel is straight,
Floor accelerator quickly,

at this point, the revs go up and redline and very few times it has entered the launch control. Am I missing something simple?

Smart high beam: turn lights to auto, push lever away from you to turn high beams on. Should be in auto high beam mode now, indicated on dash with auto high beam light symbol. I think it requires certain conditions to activate including a minimum speed.

That setting you're unsure of is the rear fog lights, check if they're working. Should be two rear fog lights.

I think the wipers have to be on the auto setting. So, that's the second click down from the top. It should say auto on the digital part of the display, between the tacho and speedo. Edit: just re-read your post. Not sure why yours isn't working, mine works in this setting. Might be a faulty sensor?

Can't help you with the rest, sorry!

Automatically open all windows with remote

How to turn on automatic high beam

How to turn on automatic windscreen wipers

If you are indeed doing it right and it still fails, then go grab the mechanic from your dealership and show them, or even better let them show you.

Yeah, That's my process for the highbeams although there is no 'AUTO' light on it.

Didn't realise there were rear fog lights, I will have to check them out tonight.

I will get the mechanic to double check the wipers. Maybe the car has to be above like 5km/hr?

...and it would be a really really good idea to go through the manual once, while you are in the car, and figure out how everything works.

Yeah I went through it although it still didn't seem to work, I will be heading into the dealer today once I pick my car up from its first service.
It has to go in tomorrow too, to get the leather seat replaced under warranty.

Cheers for the help fellas, Hopefully it should be all good once I go into the service centre later today.

To check if the sensor works: Park the vehicle, engine ON. Windscreen wiper on automatic. Now you take a bottle or a can with water. Spray the water over the windshield. I have added the position of the sensor as a picture.
Cheers mate, Yeah that is what I was doing, From what I've heard it might be a faulty sensor in that case.

EDIT: Not a faulty sensor, all fixed.

I have been into the dealership and spoke to them, Below are the following things I had found out:

Automatically open all windows with remote (currently can only close)
Not an option and it is not available for the car. (at my location)
Apparently it depends on the elevation of where you are. They said it is an option in places like Brisbane although not here in ACT

Remote start (I was told this might be available once the I30N automatic trans comes out?)
Not an option and it is not available for the car currently although might be an option next year when the auto version of the car comes out.

Adjust headlight height (currently feels too low)
It is too low and it will be adjusted by the dealer.

How to turn on automatic high beam (I have been accidentally blinding people for the last two nights since it doesn't seem to be on)
I was told that the i30N does not have automatic high beams? (I was told, if I could find somewhere that says it does then to let them know.) I am sure I read it was in the car somewhere?

How to turn on automatic windscreen wipers (I set them to auto and sprayed the front window and they havnt turned on.)(no rain lately)
Turns out I was doing something incorrectly, I must have mis-read the owners manual.

As for the 'fog' light, I had a look and it did seem to be at the back of the car only, I have not seen this feature before so thats why I never realised.
(also most of the time I had the break on while testing this and did not realise)

The dealer also has been having issues with getting the launch control to work. They will be having a look at it tomorrow and hopefully I will get some answers.
They said it could be a ton of things from the heat of the car, to cooldowns ect..

With all due respect, tell your dealer that's garbage. I'm in Australia, and my remote both opens and closes the windows.

If it's available at one dealer, I'd assume it's available Australia wide. Maybe ask the dealership again, because what they told you isn't true, and if you're still having problems, send a PM to @Bill Thomas and see what he can do.

I will ask them again tomorrow, If not I guess Bill will get a message.
So far Bill Thomas has been on top of everything ive seen.

Not sure what else i can do if the dealer is saying I cant get it.
That elevation answer sounds real dodgy to me. Hyundai are going to program the car for different elevations within Australia.
Not "expletive" likely.
What if you take the car from Brisbane to Hobart? Have to take it back to a dealer for reprogramming.
That dealer is treating you like a mushroom - you know what they feed mushrooms, don't you?

Yeah the first thing I said was 'What, so I will have to go for a drive to Brisbane to get it enabled?'
I will have to see how things go tomorrow.
